Baked Swede with Cheese Sauce

Serves 6.


  • 1/4 cup melted butter

  • 1/4 cup all-purpose flour

  • 2 cups milk

  • 1 cup shredded Cheddar cheese

  • Salt and pepper to taste

  • 1 large Swede, diced and cooked (4 to 5 cups diced)

  • 1/2 cup soft bread crumbs tossed with 1 tablespoon butter


Melt butter in a saucepan over low heat; stir in flour. Continue to cook and stir until smooth; gradually stir in milk. Cook sauce stirring constantly, until thickened. Add cheese and stir until cheese is melted and sauce is smooth. Season with salt and pepper to taste. Place Swede in a shallow, lightly buttered baking dish; pour sauce over Swede and sprinkle with buttered bread crumbs. Bake at 200°C for 15 to 20 minutes.
