Baked Swede and Chorizo
The Cyprus Tree – Ohakune
Ingredients:

2 Tbsp olive oil

2 swedes, peeled, roughly chopped

1 onion, cut into thin wedges

3 chorizo sausages, roughly chopped

3 tomatoes, chopped

1 cup white wine

2 tsp sugar

Thyme sprigs, to serve
Method:
- Preheat oven to 180°C. Heat the oil in a medium heavy-based pan and add swede, onion and chorizo. Cook, stirring often, for 3-4 minutes or until golden.
- Add tomato, wine, sugar and thyme, stir to combine and cook for 2-3 minutes. Transfer mixture to an ovenproof dish, cover and bake for 25-30 minutes or until swede is tender. Uncover 5 minutes before the end of the cooking time, to brown. Serve immediately.
