Carrot and Parsnip Bake

Serves 4

Ingredients:

  • 3 tbsp olive oil

  • 2 medium parsnips

  • 2 medium carrots

  • 2 medium onions

  • 2 tbsp flour

  • Rind and juice of one orange

  • ½ c water

  • ½ c chopped parsley

  • Salt and pepper

  • 1 ½ c grated cheese

Method:

Heat oven to 170 degrees Celsius. Peel and dice veges and slowly sauté in oil in a heavy bottom pan for 10 mins stirring often. Sprinkle in flour and cook another 5 mins. Stir in orange rind and juice, chopped parsley, seasonings and water. Cover and place in oven and cook 1 hour. Take lid off after 30 minutes and add cheese.
