PARSNIP FLUFF

Great recipe for people who don’t like parsnip! If you don’t tell them they’ll think it is potato.

Serves 4

Ingredients:

  • 3 large parsnips (about 750g)

  • Water

  • Salt

  • 1 Tbsp butter

  • 2 Tbsp flour

  • Salt and pepper

  • 1 cup milk

  • 1 egg

  • 1 C grated cheese

  • 2-3 rashers bacon (opt)

Method:

Peel parsnips, chop into quarters and cook in boiling salted water until tender. Drain and reserve ¼ cup of the liquid. Mash parsnips and put aside. Melt butter and add flour and seasoning. Cook 2 minutes then add parsnip liquid and milk. Stir and cook sauce until boiling. Add egg yolk, half the cheese and mashed parsnips. Place in greased oven proof dish. If you choose to use bacon, lay bacon rashers on top and sprinkle thickly with remaining grated cheese. If you don’t wish to use bacon, just sprinkle cheese over parsnip mixture.

Bake at 180oC for 15 mins or until bacon is cooked. Serve hot.
